Black’s Cafe: Stuffed Squash

Tex-Mex dining as Black’s Cafe goes southwestern: We had this dish once before and it was a hit straight out of the gate. Take a butternut squash and stuff it with ground beef, black beans, corn, tomatoes, green onions, mild green chiles and cheddar and/or pepper jack cheese and then bake. Found this on the Internet and then the cute chef at Black’s Cafe tweaks it a little. You can make it as spicy as you like or not spicy at all. Using really good quality beef (as the chef here does) makes this dish shine even more. Not only do you want to go for all the baked ingredients, but the squash itself is really good. This dish ticks four boxes: It’s filling, hearty, healthy for you and–last but not least–delish. Even poodles hang around the table when this one is served–probably thinking, ‘what’s that you’ve got up there? Smells tasty…’
