Blackened redfish topped with Andouille cream sauce over rice, sausage pieces, corn and onion. This is one of five weekly specials offered now through APR 22nd at The Blind Tiger on the Fairhope pier. Owner Thomas Genin lets me sample the redfish and asks for input. Fresh, cooked perfectly and straight off the grill, you canβt beat it–one of the best pieces of fish Iβve had in a long time. Genin says this will be priced in the mid twenty dollar range.
